Couscous Breakfast Meal

Servings: 8


500 ml skim milk

2 tbsps honey

3 tsps ground cinnamon

340 g dry couscous

65 g chopped dried apricots

50 g raisins

55 g slivered almonds


Get the following boiling: cinnamon, honey, and milk.

Add in the couscous and place a lid on the pot.

Place the contents to the side away from the heat and let it sit for 7 mins.

Now add your almonds, raisins, and apricots before serving.



Cherry Tomatoes Decorated Couscous

Servings: 4


170 g couscous

250 ml boiling water

3 tbsps olive oil

1 clove garlic, minced

45 g diced red bell pepper

4 green onions, sliced

150 g cherry tomatoes

30 g fresh basil leaves

1 pinch salt

1 pinch ground black pepper

1 dash balsamic vinegar

25 g grated Parmesan cheese


Preheat your oven to 350°F/180°C.

Get your water boiling then pour in your couscous.

Get everything boiling again. Then place a lid on the pot, shut the heat, and let the mix sit for 7 mins before stirring.

Simultaneously stir fry your peppers, onions, and garlic for 3 mins then add: pepper, tomatoes, salt, basil, and couscous.

Pour everything into a baking dish and add in your balsamic.

Cook everything in the oven for 25 mins then add the parmesan.



Mango Flavoured Couscous

Servings: 4


350 ml water

170 g couscous

150 g dried mango, diced

180 g prepared salsa

2 tsps ground cumin

1 tsp curry powder


Get the following boiling in a big pot: curry, couscous, water, cumin, mango, and salsa.

Place a lid on the pot and set the heat to low.

Cook everything for 4 mins and then let the contents sit for 7 more mins. Stir the couscous before plating.




Salmon Cake with Couscous

Servings: 4


Mayo Topping:

120 g mayonnaise

1 clove garlic, crushed

1/8 tsp paprika

Salmon Cake:

75 g. couscous

200 nl orange juice

450 g (canned) red salmon, drained

300 g frozen chopped spinach, thawed, drained and squeezed dry

2 egg yolks, beaten

2 cloves garlic, crushed

1 tsp ground cumin

1/2 tsp ground black pepper

1/2 tsp salt

3 tbsps olive oil


Get a bowl, mix: paprika, mayo, and garlic.

Boil your orange juice in a large pot, then add in your couscous.
