IF YOU ARE taking any medications for diabetes, do not make dietary changes without consulting a physician. This diabetic reversal program will lower your blood sugar level so you may need to reduce your medication to avoid a serious hypoglycemic reaction from taking too much medication. This book offers Dr. Fuhrman’s science-backed nutritional plan that addresses the leading cause of death in America: heart disease. A nutritarian diet plan is a diet plan rich in micronutrients. The more nutrient dense your diet, the healthier you become. The Eat to Live Plan described in this book is a nutritarian diet plan based on three dietary principles:

Vegetables, beans, nuts, seeds, and fruits are health-promoting foods.

Excessive animal products increase chronic disease risk.

Refined carbohydrates promote chronic disease and lead to people becoming overweight and obese.

Author

Joel Fuhrman, M.D. is a board-certified family physician and nutritional researcher who specializes in preventing and reversing disease through nutritional and natural methods. He is the President of the Nutritional Research Foundation and is a member of the Dr. Oz Show Advisory Board.

INTRODUCTION

Physical inactivity and a diet high in sodium, processed foods, and animal products have caused the increase in the prevalence of obesity, atherosclerosis, high cholesterol, and high blood pressure. High blood pressure is a strong risk factor for heart disease, which is the leading cause of death in the United States. It is often called "the silent killer" because it has no symptoms until a heart attack or stroke occurs.

Medication is an insufficient and ineffective intervention for the chronic diseases created by bad lifestyle and dietary choices. The best medicine is a high-nutrient, low-calorie diet and exercise, not drugs.

Macronutrients supply the calories to our body for energy and growth. They include carbohydrates, proteins, and fat. Micronutrients do not contain calories but are essential for health and growth. They include vitamins, minerals, and phytochemicals. They are in whole foods, vegetables, beans, berries, and seeds.

STANDARD AMERICAN DIET

About 85 percent of calories in the standard American diet (SAD) come from low-nutrient, high-calorie processed foods, animal products, dairy products, and sweets. All these foods contribute to weight gain, atherosclerosis, high cholesterol, and high blood pressure. Only 10 percent of the calories come from natural plants such as vegetables, beans, seeds, and nuts, which contain micronutrients that help protect blood vessels and prevent cancer. That's why we have an epidemic of obesity, diabetes, heart disease, and cancer.

THE NUTRITARIAN DIET

A nutritarian diet is a diet plan rich in micronutrients based on the health equation:

This means your health depends on the nutrient-per-calorie density of your diet - the more nutrient dense your diet, the healthier you become.
