Chapter 1: Types of Chicken Breast Cuts

Chicken breasts are considered to be healthy cuts but also slightly expensive.  The cuts, however, do justice to their price as the meat is extremely tender and soft.

Chicken breasts can be divided as follows:

Breast fillet skin on

Breast skin on, bone in

Breast skinless

Breast fillet skin on

Chicken breast fillets are cuts of chicken that are taken from just under the breasts. They lie just above the ribcage and are generally about 1 inch long. They are usually sold with the breast or a few are clubbed and sold separately.

Breast skin on, bone in

Chicken breasts lie on top of the ribcage. Chicken skin becomes quite crispy when roasted and so is preferred by most people. The bone is allowed to remain since it is a good source of calcium.

Breast skinless
