1/4 teaspoon

nutmeg

1/8 teaspoon

allspice

1/8 teaspoon

thinly sliced peeled apples (1/2 Macintosh, 1/2 Granny Smith)

Crumb Topping

2/3 cup

packed brown sugar

1/2 cup

flour

3/4 cup

quick-cooking rolled oats

1/2 cup

butter

1/4 cup

toasted pecans, chopped

Directions

Use foil on bottom of oven rather than a cookie sheet under pie pan.

Prepare pastry for single-crust pie.

Place in pie plate and trim and crimp the edge; refrigerate 30 minute loosely covered with plastic wrap.

In a large mixing bowl, stir together the sugar, flour, cinnamon, nutmeg, allspice, and salt.

Add apple slices and gently toss until they are coated well.

Transfer mixture to pie.

FOR CRUMB TOPPING: Stir together brown sugar, flour, and oats.

Using a pastry blender, cut in the butter until topping resembles coarse crumbs.

Sprinkle over apple mixture in pie.

To prevent over-browning while baking, cover edge of pie with foil.

Bake at 375 degrees Fahrenheit for 25 minutes.

Remove foil and bake 25 to 30 minutes more, or until top is golden.

Remove from oven.

Cool on wire rack about an hour and serve!

Dutch Apple Pie

peeled cored sliced cooking apples

1 tablespoon

lemon juice

1/2 cup

granulated sugar

1/4 cup

brown sugar, packed

ground cinnamon

Directions

Preheat oven to 375°F.

Fit pie crust into pie plate.

In a large bowl, mix sliced apples, lemon juice, both sugars,flour, cinnamon and nutmeg.

Pile into crust.

Prepare topping:.

In a medium bowl, with a pastry blender or a fork, mix flour, both sugars, and butter until coarsely crumbled.

Sprinkle evenly over apples.

Bake at 375°F for 50 minutes.

Almost Apple Pie

Filling

sliced apples

white sugar (more if desired, we go with the 1/2 cup)

cinnamon, to taste

Directions

Whisk the crumb mixture together and pat half the crumb mix into an 8x8 baking pan.

Slice apples into a large bowl, add the dry ingredients, mix gently and place filling over the crumb base.

Put the remaining crumbs over the apples and pat in place.

Bake in a 350 oven 40 to 50 minutes or till nicely colored, times vary from oven to oven.

Granny Smith apples (1/4-inch slices)

1 (3 1/2 ounce)

package coconut cream pudding mix or

1 (3 1/2 ounce)

package French vanilla pudding mix

1 (9 inch)

pie crusts, unbaked

Topping

1/4 cup

butter, softened

1/2 cup

flour

1/4 cup

sugar

1/4 cup

brown sugar

1/4 cup

chopped pecans (optional)

1 teaspoon

cinnamon

Directions

In mixing bowl, combine apples and pie/pudding (DRY) mix; toss to coat well.

Place apple mixture in unbaked pie crust.

In small bowl, mix all topping ingredients until crumbly.

Sprinkle topping over apples.

Bake at 350 degrees Fahrenheit for 35 to 40 minutes until topping is golden brown and pie is bubbly.

(Try different pudding mixes and fruits--peaches are yum--for different flavors).

I serve it with a scoop of butter pecan or rum raisin ice cream.

Easy Dutch Apple Pie

brown sugar, packed

quick-cooking oats

2/3 cup

cornstarch

tart apples, peeled and sliced (I use Granny Smith)

1 teaspoon

vanilla extract

Directions

Combine flour, brown sugar, butter/margarine and oats; set aside 1 cup for the topping.

Press remaining crumb mixture into an ungreased 9 inch pie plate; set aside.

For the pie filling: combine sugar, cornstarch and water in a saucepan until smooth, bring to a boil.

Cook and stir for 1 minute or until thickened.

Remove from heat and stir in apples and vanilla.

Pour filling mixture into crust and top with the 1 cup crumb mixture.

Bake at 350 degrees for 45 minutes or until crust is golden brown.

Amish Sour Cream Apple Pie

Stir in apples.

Bake at 400 degrees for 25 minutes.

Mix the crumb topping ingredients until crumbly.

Remove pie from oven and spread with crumb topping.

Bake 20 more minutes.

Swedish Apple Pie

Fill pie pan 3/4 full with apples.

Mix 1/4 cup sugar and 3 tsp cinnamon.

Sprinkle over apples.

In saucepan, melt butter and remove from heat.

Pour evenly over the apples in pan.

Bake 45 minutes.

Illinois Apple Pie

Crisco shortening

1/2 cup

ice water

1/4 cup

milk

1/4 cup

Apple Filling

6 cups

tart apples, peeled & sliced

1/2 cup

sugar

1/2 cup

brown sugar

cinnamon

lemon juice

Directions

Preheat oven to 450 degrees.

For crust,combine flour and salt in mixing bowl.

Cut in shortening with pastry blender or 2 knifes until mixture is uniform.

Add water; toss lightly with a fork until dough forms a ball.

Divide dough into 2 parts.

On lightly floured surface,roll bottom crust into circle 1/8" thick and about 1 1/2" larger than inverted 9" pie plate.

Gently, ease dough into pie plate,being careful not to stretch dough.

Trim edge even with pie plate.

For apple filling:Combine all ingredients in mixing bowl.

Stir until mixed well.

Spoon into unbaked pie shell.

Use remaining half of dough to roll top crust,as instructed for bottom crust.

Lift onto filled pie.

Trim 1/2" beyond edge of pie plate.

Fold top edge under bottom crust;flute as desired.

Cut slits or design in top crust to allow steam to escape.

Brush top crust with milk;sprinkle with white sugar.

Bake at 450 degrees for 20 minutes.

Reduce heat to 350 degrees; bake an additional 25 to 30 minutes or until crust in golden brown.

Cool and serve .

pastry for double-crust pie (or use Pillsbury pie dough, in dairy section of grocery store(package has ready-made crust for pie)

Directions

Preheat oven to 350°F.

Line pie pan with bottom crust.

Peel and slice apples.

Put 1/2 of the apple slices in prepared pie pan.

Sprinkle apple slices with 1/2 cup sugar, a little nutmeg and cinnamon.

Add rest of apples and top with rest of sugar (1/2 cup), a little nutmeg cinnamon, flour and butter or margarine cut into small pieces.

Sprinkle with lemon juice.

Cover with top crust.

Crimp edges together with fork.

Sprinkle top with sugar and cut steam vents in top crust.
